 Chinese Ketchup Chicken – Keto, Sugar Free, Low carb

Who does not love Chinese food? I mean the American style Chinese food that is basically a sweet and salty sugar bomb. I do keto to heal my autoimmune (RA) so sugar is a no no unless I want joint pain. I was sent a few bottles of sauces from Alterna Sweets. last week. I decided to try my hand at a sweet and salty chicken recipe using their sweet and spicy ketchup. Alterna Sweets sweeten their sauces with Erythritol instead of sugar.  My daughter and I ate this for lunch and let me tell you, it is kid approved as well.

When I make low carb Chinese food these day’s I do not add a breading. In America most Chinese food is battered and fried. I do not even miss the batter anymore. I have found that it is lighter and tastes just as good without the breading.

This recipe goes great with my Cauliflower Fried Rice.

Ingredients:

3 green onions

18 oz of boneless skinless chicken thighs

Salt to taste

Sauce ingredients:

30 g Sugar Free Ketchup – I use Alterna Sweets Spicy Ketchup – if you do not have a spicy ketchup add a dash of Sriracha

1 Tbs Coconut oil or olive oil

40 g Coconut Aminos – I use this

10 g Red Boat Fish Sauce

10 g Maple Extract

1 tbs Powdered Swerve

2 chopped garlic cloves or granulated garlic

1/2 tsp ground ginger

10 ml white wine vinegar

Instructions:

Chop the chicken into bite sized pieces. Heat the oil in a cast iron skillet. Add the chicken and sprinkle with salt. Brown the chicken until the edges are crispy.

Chop the green onions and set aside.

Mix the sauce ingredients. Add more or less swerve and salt to taste.

Place the onions in the skillet and saute for 2 minutes.

Pour the sauce over the chicken and saute until the sauce has reduced a bit and is sticky.

Garnish with Sesame seeds and serve.

  1. I just found the brand Primal Kitchen. They have a spicy ketchup without any artificial sweeteners. I wonder if it would be a good ketchup to use in this recipe?
