Keto Strawberry Coconut Chia Seed Pudding

You can eat strawberries and stay on a Keto diet. Strawberries are only .7 carbohydrates for 12 oz of strawberries. As long has you don’t go overboard with strawberries, you can fit them in. Check out this super simple snack or desert recipe below.

Chia seeds

Living in rural North Dakota I had a hard time finding chia seeds and I ordered them online. Lately I have seen Chia seeds in most grocery stores including Walmart.

Chia seeds are a good source of omega-3 fatty acids, fiber, antioxidants, iron, and calcium.
Omega-3 fatty acids have been shown to improve Rheumatoid Arthritis symptoms. Omega 3 fatty acids also regulate inflammation and help prevent several metabolic diseases.

When you add liquids to chia seeds a gel membrane coats the seeds. This gel coating helps bind liquids together and can make a pudding like consistency. I add chia seeds to tea and use it to make puddings like the recipe below. Chia seeds can also be used in baking to replace an egg.  I was out of full fat coconut milk I added in 24 g of Fat Pack from Cave Shake to boost the fats.  To make this paleo, omit the stevia and fat pack and you are good to go.

Ingredients:

  • 50 g fresh chopped strawberries
  • 80 ml Almond Coconut milk or almond milk.
  • 28 g Chia seeds
  • 6 drops stevia to taste
  • 1/4 tsp vanilla extract
  • 24 g Cave Shake (optional)

Instructions:

  • Mix all ingredients together in a bowl or mason jar.
  • Chill, covered in the refrigerator for 1-2 hours until the pudding has reached a pudding like consistency.
  • Use less liquid if you want to to be thicker.
  • Adjust your stevia levels to taste.
  • Then, go eat it.
