This Key Lime Pudding recipe started out as a failure. I was attempting to make an amazing Key Lime Pie with an amazing crust and everything. Well, the crust turned out freaking delicious and the filling also turned out freaking delicious. The pie filling was more of a pudding consistency though. I decided to change thing up and make it a pudding recipe and work on the pie consistency at a later time. I am out of lime juice anyway.

Erythritol Simple Syrup

I wanted to use a liquid sweetener and I only have stevia in the liquid form. After playing around with different ingredients I settled on a super simple syrup made from Erythritol, Maple or Vanilla Extract, Liquid Stevia and water. This is very easy to make and it helps the pudding stay silky.

Secret Ingredient

This was my first time creating a sweet dish with Avocados. Avocados add fat, substance and color to this recipe. I promise you, your pudding will not taste like guacamole. By using Avocados and coconut oil I was able to create a delicious pudding that is dairy free, low carb and high fat.

Ingredients

Pudding Ingredients

  • 2 ripe Avocados or 200 mg
  • 1.6 oz Lime Juice
  • 3 TBS Melted Coconut Oil
  • 1-2 Tsp Vanilla or Almond extract
  • 2/3 cup Erythrytol Simple Syrup
  • Pinch of Salt

Erythritol Simple Syrup Ingredients

Instructions

Simple Syrup

  • Using a small heavy bottomed pot, add the water, erythritol, stevia and the extract to the pot and turn the hear to low medium heat. Stir occasionally until it comes to a boil.
  • Let the syrup reduce and thicken for about 3-5 minutes.
  • Turn off the heat and sprinkle the Xanthuim gum over the liquid.
  • Whisk until thickened.

Pudding

  • Cut, peel and de pit the avocados and place them into a food processor.
  • Add the coconut oil, salt, simple syrup, lime juice and extract to the food processor. (I’ve been using this one for the past 5 years and I love it!)
  • Run the food processor for about 2-3 minutes, scraping the sides for an even mixture. Stop when you have reached “pudding” consistency.
  • Scoop the pudding into individual ramekins and chill in the refrigerator for about an hour.

  1. I’m unsure about what the serving size is.

      This is one of my first recipes on the blog and it looks like I need to fix a few things. I just re calculated the nutrition on it and it looks like about 3 servings – I would just divide the recipe into three servings and go with it. I will fix this in the morning for sure thanks for the heads up.
