As a Girl Scout Troop Leader I have true respect for the Thin Mint cookie. Now that I am an adult I love all things chocolate mint even more. These cookies are not crunchy like the thing mint but the flavor profile is very similar. Mint Chocolate is one of my favorite desert flavorings and for this reason keto mint chocolate cookies were born. These keto cookies would go great with a cup of hot cocoa on a snowy Christmas morning.

Cooking with Coconut Flour

Coconut flour absorbs a lot of liquid and for this reason I only added 5 TBS of coconut flour to this keto cookie recipe. When you go to roll the cookie dough into balls the texture should be very similar to play-doh. If you find that the cookies are too gooey then add a couple pinches more of coconut flour to the cookie dough.

120 calories
4 grams of fat
4 grams protein
10 grams of fiber
16 grams carbohydrates
2 grams of sugar

Coconut flour contains 6 grams of sugar per tablespoon or 28g. This is a bit high however due to the high liquid absorption rate of coconut flour you do not need to use a lot of it in order to create a delicious cookie. 

Dairy Free Keto Cookies

Keto Mint Chocolate Cookies are dairy free. I used a dairy free keto friendly butter substitute for these keto cookies. I used Butter flavored Coconut Oil however if you are not worried about dairy in your diet then feel free to use butter instead.

Keto Mint Chocolate Cookies

Ingredients

Cookie Dough

  • 2 TBS Cocoa Powder
  • 5 TBS Coconut Flour
  • 6 TBS Butter flavored Coconut Oil or butter
  • 1 tsp Mint extract
  • 60 Drops Liquid stevia
  • 1/2 cup Erythritol
  • 3 Meduim eggs
  • 1 tsp baking powder
  • 1 Packet Unflavored gelatin

Chocolate topping

  • 1 oz 100% Bakers Chocolate
  • 1 oz Coconut Oil
  • 1/4 tsp Mint Extract
  • 20 drops liquid stevia

Special Equipment:

  • Cookie Sheet
  • Hand held mixer
  • Cooling rack
  • silpat
  • Glass measuring cup

Instructions

  1. Preheat the oven to 350 degrees and place a silpat or parchment paper on a cookie sheet. Next, measure into a medium sized bowl the butter or coconut oil, sweetener, stevia and mint extract. “Cream” the ingredients together with a hand mixer until combined. Add the eggs to the bowl and combine using the hand mixer. 

  2. Add the coconut flour, gelatin, cocoa powder and baking powder to the bowl and stir with a wooden spoon until combined. 

  3. Roll the cookie dough in between the palms of your hands into 21 balls about 2 inches in diameter. Place the cookie balls on the silpat and press lightly with the back of a measuring cup and squish them just slightly. Bake the cookies in the oven at 350 degrees for 8-10 minutes then transfer the cookies on to a cooling rack. Place the cookies inside of the freezer for about 20-30 minutes until frozen

  4. Meanwhile, place the coconut oil and bakers chocolate in a glass measuring cup and melt using the microwave. I highly suggest using 15 second intervals so that the chocolate does not burn. Stir the stevia and mint extract into the melted chocolate mixture and set aside.

  5. Take the frozen Keto Mint Chocolate Cookies out of the freezer and place the cookies back on the cooling rack. Drizzle the melted chocolate on top of the frozen cookies. Store the keto cookies in an air tight container in the refrigerator as soon as the chocolate has dried. Share with your family and friends this holiday!

    In your instructions for the keto mint chocolate cookies batter, you missed mentioning coconut flour and typed in coconut oil in its place. As i have recently gone through cancer treatments, it took me quite some time to figure out where the error was in this recipe. I hope it can be corrected before many others with mental issues suffer the same frustration.😢😣
