I made these keto cookies because my wife asked me to make her cookies. The rule around my house is if I cook it then I had better be able to try it.

I remembered that I had a bag of Lily’s Chocolate Chips in the freezer that I had picked up on sale a few weeks ago.

I brainstormed and after two recipe trials I was able to create a soft and chewy Keto Chocolate Chip Cookies that the whole family loved.

It is important in order to maintain my keto lifestyle that I made these keto cookies low carb.

This keto chocolate chip cookie recipe makes 24 cookies or two dozen.

What Kind of Flour do you use to make Keto Cookies?

I use Coconut flour to make my keto cookies. Coconut flour is slight carby-er than almond flour however I love the smooth texture that coconut flour adds to cookies.

How do you make Chewy Keto Cookies?

The secret ingredient in these cookies is the added gelatin. I use Knox Brand gelatin to make my keto cookies soft and chewy. This helps the cookies hold together and does not add any taste.

What is the best sweetener for keto cookies?

My favorite zero carb sweetener to use is Golden Monk Fruit. This sweetener is a combination of Erythritol and Monk Fruit.

The most important part of Keto Chocolate Chip cookies are the Chocolate Chips.

There are several way’s you could use keto chocolate in these cookies.

I used Lily’s dark chocolate chips in this keto cookie recipe.

Ingredients

Instructions

    1. Preheat the oven to 350 degrees and place a silpat or parchment paper on a cookie sheet. Next, measure into a medium sized bowl the butter or coconut oil, sweetener, and extract. “Cream” the ingredients together with a hand mixer until combined. Add the eggs to the bowl and combine using the hand mixer.
    2. Add the coconut flour, baking powder, salt, and gelatin to the bowl and stir with a wooden spoon until combined. Add the Chocolate Chips, taste one yourself. Your welcome 🙂
    3. Roll the cookie dough in between the palms of your hands into 24 balls about 2 inches in diameter. Place the cookie balls on the silpat and press lightly with the back of a measuring cup and squish them just slightly. Bake the cookies in the oven at 350 degrees for 8-10 minutes then transfer the cookies on to a cooling rack. Freeze and thaw later or eat them as soon as they have cooled. These cookies taste best after they have cooled.

Notes

These cookies taste best when they have cooled fully. The Cookies will look like they are not fully done on top but let me assure you, they're done.

  1. Am I missing where you add the coconut flour? Assuming in the baking powder, salt, gelatin step?

      Yes, add the coconut flour along with the other dry ingredients. I apologise for the confusion.

      1. Do you have to let the dough sit for any amount of time? I know most recipes with coconut flour suggest this for the flour to completely absorb the moisture of the wet ingredients.

          Although it will not hurt the cookies, they do not need to sit in order to become workable for this recipe.

      2. It would be helpful if you edit the recipe. I got all the way through the directions before I realized the coconut flour hadn’t been added lol! Fortunately it didn’t hurt anything to add it in at the end. I just let them sit for a couple minutes to let the flour absorb the moisture.

      I suppose you could substitute the gelatin for Xanthan Gum. I have never tried it like that before so if you do let me know how it turned out.

      Right?! Just use large eggs – they will work out just fine for you. I chose medium because it was a suggestion in the recipe card plug in that I use. Medium or small eggs are eggs in my book!

      Hello- I did not write down the total carbs for this recipe. I use the “stupid simple Keto” app on my phone to factor the macros out for each recipe, if you download the app you can input the recipe and see for yourself.

          They stay better when they are refrigerated however I have stored them in a ziplock baggie in my lunch box and they did just fine. After a few days they do fall apart without refrigeration.

  4. You have 1 tsp of baking powder on the ingredients list twice. Is that a type-o or do I need 2 sep amount of baking powder?

  5. So do you use a whole pack of gelatin? I used a box that had all these small individual packages in it( I only used one pack) and 1 tsp of baking powder and mine dough never got doughy enough to
    Roll into balls? I’m missing something I think. Only 5 TBS of almond flour? Thanks!

      Hello! I used the whole packet. I am not sure what the size was but I can check when I get home. The serving on the packet is something like 1/4 packet. I believe it works out to about 1 TBS or so of Gelatin. The recipe calls for 5 TBS of coconut flour, not almond flour. That might be why they did not turn out right. Coconut flour absorbs the liquid better than almond flour.

  7. I’m curious about your nutrition calculation stating there’s zero sugar alcohols, when you’ve called for 1/2 cup golden monk fruit, which contains 96 grams of erythritol sugar alcohols (4g per tsp). Divided by 24 cookies, that should be 4g per cookie, correct?

      I do not count sugar alcohols when I add up my net carbs for recipes. I will have to rea read this article and make sure I am providing the correct information. If you do count sugar alcohols then the carbs will be higher. I believe these cookies come out to 0.4 net carbs per cookie. (total carbs-sugar alcohol – fiber= net carbs)

  8. My hubby has been craving chocolate chip cookies since we started keto. I tried these today with high hopes. Yikes! What did I do?? It was a horrendous fail. I followed the recipe exactly but there was no way this dough was going to be rolled into balls. I refrigerated it for 30 minutes. Consistency was no different. Experimented with just 4 cookies by dropping dough onto the parchment paper with a spoon. Still spread into each other. Dropped them into mini cupcake papers. What a mess. I wouldn’t care what they looked like if they tasted good but they were crazy salty. I’m sad. No chocolate chip cookies for you, hubby.

      Wow! I wonder what went wrong? Coconut flour can be finicky depending on the brand. If you get adventurous and attempt this recipe again try adding a tbs or two more of coconut flour to absorb the liquid and don’t add salt.

  9. I just made these and they are SO good. I substituted an equal amount of Swerve for the sweetener and added a bit more of the chocolate chips. I was a little worried when I transferred them to the cooling rack because they didn’t seem like they were holding together, but once they cooled they were perfect. Excellent recipe.

      Awesome! I am so glad the recipe worked out for you. The key is to let these guys cool off before eating them. I have found that when baking with sugar alternatives the baked goods are not awesome until they are cooled completely.

      Thank you for the feedback. A few other people have made this recipe and did not like the amount of salt I used. I will adjust my recipe, I LOVE salt, sometimes my tastes are a bit off it seems.
