Ingredients

  1. First, Pre-heat the oven to 350 degrees F.
  2. Next cut a piece of parchment paper to fit your baking sheet and line the baking sheet with the parchment paper.
  3. Add all the ingredients except the rainbow sprinkles to the food processor. Dump it all in.
  4. Blend the ingredients in the food processor until smooth. Scrape the sides and then blend a bit more.
  5. Place about a Tablespoon of batter on to the parchment paper. Use a wet spoon to smooth the cookies out on to the paper. These cookies will not "spread". Make them about half an inch thick. I was able to make 12 out of one batch.
  6. Garnish the cookies with a pinch of Rainbow Sprinkles.
  7. Place the cookies in the oven for 10-15 minutes. Once the middle has set up take the cookies out of the oven and let them cool for 5-6 minutes before removing from the pan.
