Key lime pudding

Ingredients

  • ----Pudding Ingredients----
  • 2 ripe Avocados or 200 mg
  • 1.6 oz Lime Juice
  • 3 TBS Melted Coconut Oil
  • 1-2 Tsp Vanilla or Almond extract
  • 2/3 cup Erythrytol Simple Syrup
  • Pinch of Salt
  • ----Erythritol Simple Syrup Ingredients----
  • 1 cup boiling water
  • 3/4 cup erythritol
  • 6 drops of liquid Stevia
  • 1 tsp maple or vanilla extract
  • 1/8 -1/4 tsp Xanthium Gum powder

Instructions

  1. Simple Syrup Instructions
  2. Using a small heavy bottomed pot, add the water, erythritol, stevia and the extract to the pot and turn the hear to low medium heat. Stir occasionally until it comes to a boil.
  3. Let the syrup reduce and thicken for about 3-5 minutes.
  4. Turn off the heat and sprinkle the Xanthuim gum over the liquid.
  5. Whisk until thickened.
  6. Pudding Instructions
  7. Cut, peel and de-pit the avocados and place them into a food processor.
  8. Add the coconut oil, salt, simple syrup, lime juice and extract to the food processor.
  9. Run the food processor for about 2-3 minutes, scraping the sides for an even mixture.
  10. Scoop the pudding into individual ramekins and chill in the refrigerator for about an hour.
