Ingredients

2ripe Avocados or 200 mg
1.6ozLime Juice
3TBSMelted Coconut Oil
1-2TspVanilla or Almond extract
2/3cupErythrytol Simple Syrup
Pinchof Salt
----Erythritol Simple Syrup Ingredients----
1cupboiling water
3/4cuperythritol
6drops of liquid Stevia
1tspmaple or vanilla extract
1/8 -1/4tspXanthium Gum powder
Instructions
Simple Syrup Instructions
Using a small heavy bottomed pot, add the water, erythritol, stevia and the extract to the pot and turn the hear to low medium heat. Stir occasionally until it comes to a boil.
Let the syrup reduce and thicken for about 3-5 minutes.
Turn off the heat and sprinkle the Xanthuim gum over the liquid.
Whisk until thickened.
Pudding Instructions
Cut, peel and de-pit the avocados and place them into a food processor.
Add the coconut oil, salt, simple syrup, lime juice and extract to the food processor.
Run the food processor for about 2-3 minutes, scraping the sides for an even mixture.
Scoop the pudding into individual ramekins and chill in the refrigerator for about an hour.
