Instructions

Flax Egg

  1. Mix together 1 TBS of Flax seeds or meal with 2.5 TBS of water in a small bowl. Let the Flax egg sit for about 5 minutes. I used this tutorial to create my flax egg as I was out of eggs. 

  2. Once your flax egg has set and is a bit "jelly" spray  or grease the inside of a microwave safe mug or bowl. 

  3. Add the Protein powder, Coconut Flour and baking powder together in your mug. Combine the dry ingredients together until blended. 

  4. Add the Flax egg, vanilla extract and half of the almond milk to the mug and stir to combine. Add more almond milk until the batter is thick and sticky. 

  5. Place the mug in the microwave for about 2-2.5 minutes. Microwaves are different so this may take more or less time depending on how yours runs. You will know when the cake is finished when the top looks done like a real cake and it pulls away from the sides of the mug a bit. 

  6. Slide a butter knife along the sides of the mug cake and turn the mug upside down on to a place.
