Orange Creamsicle Keto Fat Bomb Bites
Yesterday I saw orange extract on sale at Albertsons so I bought some and tried it for the first time on my Orange Creamsicle Keto Fat Bomb Bites.
When I got home, I sat it on the counter and wondered what I could do with it. Orange creamsicle ice cream pops were always a summer favorite my mine when I was a kid. The decision to make these orange creamsicle fat bombs was easy after that.
Since I don’t do dairy these days I naturally turned to coconut products. Coconut butter is delicious on its own but when you add coconut milk to it and heat it up it takes on a new deliciousness of its own.
Ingredients:
4 tbs (64 g) coconut butter I use this
2 tbs (32 fl) canned coconut milk I use this
2-4 tsp powdered erythritol I use this
1 tsp vanilla extract to taste
1.5-2 tsp orange extract to taste
Pinch of pink Himalayan sea salt – optional
How to:
Scoop the coconut butter out of the jar into a microwave safe bowl. If the coconut butter has separated in the jar gently heat it up and stir until it is blended
Add the coconut milk and heat it up in the microwave for about 30 seconds. Stir until combined.
Add in the extracts and sweetener. Add more or less depending on your tastes. I personally go a bit lighter with the erythritol because I don’t eat sugar. Sweet things taste ultra sweet to me.
Press into molds or roll into balls. Chill in the fridge until solidified. Store in the fridge and consume whenever you want a little Keto treat!
