Keto Lime Curd

I created this delicious Keto Lime curd to go alongside my Keto Meringue Cookies. The green color is achieved by using green food coloring which some people do not like and for this reason, it is totally optional. When you do not use green food coloring the lime curd will be a pale greenish yellow which is fine, unless you are creating a delicious lime slime for Halloween treat.

Ingredients

Instructions

  • Place the egg yolks inside a heavy bottomed small pot. Turn the stove up to medium and start stirring. Stir constantly.
  • After 2 minutes add the stevia. Slowly, while still stirring, add the erythritol. 
  • Stir the Lime Curd for 3-5 minutes being careful to never let the mixture boil. 
  • Next, add the coconut oil and keep stirring until the mixture starts to bubble. As soon as you see the first bubble remove the Keto Lime Curd from the heat and pour it into a mason jar. 
  •  Lastly,  it is important to remember that the Keto Lime Curd will harden when cold.  Store in the refrigerator however if you are serving it alongside the Keto Meringue Cookies heat the Lime Curd for a few minutes so it looks slimy.

  • 4 TBS Coconut Oil
  • 20 Drops Stevia
