I made this Chocolate Peanut Butter Pudding Bomb the other day for just myself. I did not share my pudding with anyone becaause I made it just for one, just for me. Sometimes you just need to do something nice for yourself and no one else. So in the words of the iconic RuPaul, “If you can’t love yourself how the hell you gonna love somebody else?”
MCT Powder
Chocolate Peanut Butter Pudding Bomb – Keto Desert for one can be made with or without the MCT powder. I use a powdered MCT powder that Now Keto sent to me to sample. Its great!! If you do not have MCT powder, leave it out. The Chocolate Peanut Butter Pudding will still taste delicious there will just be no added bonus energy added from the MCT powder.

Chocolate Peanut Butter Pudding Bomb – Keto Desert for one
Ingredients
- 18 g PB-2 Powdered Peanut Butter ( I use this one)
- 12 Drops of liquid Stevia (I use this one)
- 50 ml of Coconut Milk (my favorite brand)
- 10 mg Powdered MCT oil (I use this one)
- 10 mg Cocoa Powder
- Pinch of Red Himalayan Sea Salt
Special Equipment
- Handheld Frother ( I have used this one for about a year)
Instructions
- Measure out the Coconut Milk and Stevia into a small bowl.
- Use a handheld frother to “froth” the coconut milk. Continue to “froth” until the coconut milk has aerated and expanded by about a quarter.
- Add the dry ingredients and mix with a spoon until it has reached the consistency of pudding.
- Add a pinch of salt to taste
- DEVOUR!
