Mint Chocolate Fat Bombs: Dairy Free Keto

Chocolate and peppermint go very well together These Mint Chocolate fat bombs are a matches made in heaven. Living a ketogenic lifestyle you must make sure eating enough healthy fats a priority. Chocolate mint fat bombs will help you get those fats in and it’s also a treat!

I made these Chocolate Mint Fat Bombs on a relatively warm day for North Dakota, it was 25° out. The cold weather was a benefit to me when making that bombs because I can use my side porch as a walk-in freezer.

Mint Madness

In order to create the mint layer for the mint chocolate fat bombs I had to play around with the flavors. I used a combination of coconut butter, mint extract, stevia, erythritol and coconut milk. That bring said, I suggest adjusting the sweetener and mint extract to your tastes.

Instructions

  • First, melt 2 oz of 100%  bakers chocolate and 2 oz of coconut oil in the microwave.
  • Next starting with 30 second intervals in the microwave and stir in between.
  • As the chocolate mixture melts, switch to 10 second intervals until the chocolate is melted.

100 percent dark chocolate

  • In order to soften the coconut butter and cook with it, first put the coconut butter in the microwave for 30 second intervals.
  • Next stir the coconut butter with a butter knife until it is mixed and ready to use.
  • Set the melted coconut butter aside and start making the mint layer.

Coconut Butter

  • In a bowl mix two tablespoons of coconut butter, 2/3 tsp mint extract, 1 tbs coconut milk and 2-3 drops of liquid stevia together.
  • If the mixture is too solid microwave it in 10 second intervals. Add erythritol to taste. I used about 1.5 tbs of erythritol.

  • Pour half of the chocolate mixture into the candy mold and reserve for later.

Mint Chocolate Fat Bombs

  • Use a tiny spoon, and place about a 1/2 teaspoon of the mint layer into each candy mold.
  • Pour the remaining chocolate over the mint layer.
  • Chill in the freezer for 1-2 hours or until set. Store the Mint Chocolate fat bombs in the freezer. Take the Mint Chocolate fat bombs out of the freezer about 2-5 minutes before consuming.

  2. What about the other half of the chocolate that’s reserved? I see after adding the mint layer you freeze then eat. Is the other half of chocolate for something else or are we supposed to add it to the mold after chilling? Sorry just want to make this ASAP and want to double check if we are supposed to use other half of chocolate to cover the mint layer. By the way I am loving your creative recipes keep up the awesome work!

      Woops! Thanks for the heads up – yes pour the remaining chocolate over the mint layer – I have made these before pouring all the chocolate and just adding a dollop of the mint on top and the turned out just fine I will fix this
