Ingredients
Low Carb Lemon Loaf
- 2 cups (about 200g) Blanched Almond Flour
- 3/4 cup Golden Monkfruit Extract (Use Code OMGKETO15 save 15%)
- 1/2 Cup Light Tasting Olive Oil
- 3 eggs
- 1 1/2 Tsp Baking Powder
- 1/2 Tsp Vanilla Extract
- 1/2 tsp Xanthan Gum
- Rind and juice from one lemon (about 1/4 cup lemon juice)
Lemon Icing
- 3 TBS Powdered Monkfruit (OMGKETO15 save 15%)
- 2 tsp Lemon juice
- 2 TBS coconut oil
- OPTIONA: 1 TBS Lemon Zest
Instructions
1. Preheat the oven to 350 degrees and
prepare a bread loaf pan by greasing the sides and lining with parchment paper.
Combine the wet ingredients together stand mixer for about 2 minutes. Add the
golden monk fruit sweetener and mix until combined. Taste and adjust with
more sweetener or extract according to your taste.2. With the mixer still running on low,
sprinkle the Zantham gum over the batter until combined. Add the dry
ingredients to the mixer and mix on medium until combined.3. Pour the lemon loaf batter into the
prepared bread loaf pan. The batter will be thick, you may need to use a
spatula.4. Bake in the oven for 25-30 minutes
or until a toothpick inserted into the middle of the lemon loaf comes out clean
and when you shake the cake there is no "jiggle" effect. Allow the
loaf to cool before frosting.5. Melt the coconut oil and combine
with the lemon juice and powdered monkfruit until it is thick and white ish.
Drizzle the frosting over the loaf and then put it in the refridgerator to
chill for about 5 minutes. Optional: Sprinkle lemon zest on top of the icing.
Once the glaze has hardened up slice and serve.
