Ingredients
Shortcake
- 2 Tbs Coconut Flour
- 16 g Isopure Vanilla Protein Powder
- 2 Tbs Lakanto Brown Sugar Monkfruit (OMGKETO15 = 15% discount)
- 1 tsp Baking powder
- 3 Tbs Almond Milk
- 1 egg
- 1 tsp vanilla extract
- Pinch of salt
Shortcake Filling
- Dairy Free Whipped Topping Almond
- 50 g strawberries
Instructions
- Slice the strawberries into little bite sized pieces.
- Grease a microwave safe coffee mug with a healthy oil such as coconut oil or avocado oil.
- Mix the dry ingredients first and then add the wet to the dry. Stir until combined and then add to the mug. Microwave the mug for about 90 seconds, if the top of the cake looks like it is not finished try another 30 seconds or so until done. Place a plate on top of the mug and flip the mug over upside down so that the cake flips on to the plate.
- Slice the cake into three parts and assemble the Strawberry shortcake as follows: Cake, Cream and berries, cake, cream and berries and then top it off with more cream and berries. Enjoy your awesome easy low carb Strawberry Shortcake mug cake.

Can this be made without the protein powder?
No, this recipe hinges on the protein powder.
I swapped in 3tbsp of almond flour for the protein powder(since I had no protein powder on hand) and doubled the vanilla extract. Followed the rest of the directions as is, did microwave for the extra 30 seconds with my microwave. Sliced and split between 2 adults and one 3 year old to make mini strawberry shortcakes for dessert after dinner and it worked out perfect. Had no issues using almond flour instead of protein powder.
